Vegan Garlic Mayonnaise
Makes: 630 grams
Ingredients
340 grams of silken tofu
200 grams of olive oil
2 tbsp. of dijon mustard
4-7 medium-sized garlic cloves (depending on your preference)
2 tbsp. of lemon juice
1 tsp. of salt
Instructions
Pour all of the ingredients into a food processor or blender and blend until smooth!
Notes
If you use a blender, you might have to play around with a little until it is fully mixed, although since the tofu is silken and not firm, it doesn’t take too long before all of the ingredients create the smooth consistency you’re looking for!
Make sure to keep the mayonnaise in the fridge once it’s made and it should last you up to 3 weeks!
